While many restaurants still allow diners to reserve a table with just their name and phone number, some restaurants now charge people to reserve a prime seating time, either as an extra fee or as a deposit towards the final check.

Entrepreneurs have also caught on to the value in reservations and looked to tie up free or below market cost reservations then sell them at a profit to others.

Many people are willing to pay a restaurant fee to guarantee a prime seating time at a trendy restaurant.
